The mountains are calling…
How does the sound of Hot chocolate or coffee arriving at your room in the morning, heralded by a gentle knock and a smiling face, while you pop back into bed and greet the morning snuggled up, hands wrapped round a warm mug, maybe with a good book or the kids cuddled in your arms, appeal…?

It happens every morning at Wyndford! Well the steaming coffee or tea, that is… In actual fact what is most likely to happen is that the kids woke you up at six, even though getting them up for school is a mission. By seven you have already been to visit the geese and rabbits, said hello to the horses and had a love from Lunar or Felix, while your other half grabs a precious hour of extra sleep. If the kids are old enough to roam, they do all that by themselves happily, knowing that they will amazingly appear at the breakfast table before you, once they heard the bell…

And now! Cook up a storm…
Hunter’s Style Chicken – although not sure which hunter would take olives and wine with…
– Olive oil
– 2 kg Chicken pieces
– 2 Springs Rosemary
– 2 Garlic Cloves
– 1 small fresh red Chilli or some Chilli Flakes
– Small sprig of fresh Sage
– 400 ml dry White Wine (plus you know a little extra if needed)
-1 – 2 Tbsp red Wine Vinegar
And a handful of pitted olives
In a large deep pan with a lid, warm the olive oil and working in batches – skin side down – cook chicken until a golden crust forms… don’t rush it! (do homework with the kids)
Keep doing until all the chicken is golden, and smelling delish! Chop the leaves from one spring of rosemary and finely chop the garlic and chilli. Put all the chicken back in the pan, and sprinkle with the rosemary, garlic and chilli – toss in the sage and other rosemary sprig, and a grind of salt and pepper. Stir in the wine (no it wasn’t for drinking) cover the pan and reduce the heat to low for about 45 to 65 minutes – time to bath the kids or watch the sunset. Turn chicken from time to time and add more wine if the pan seems dry. Take the lid off for the last 5 minutes and add the red wine vinegar and olives and check seasoning… just yum! Serve with your favorites. Alternatively you could join us and we do it all for you… a real holiday for everyone!
